all i can say for those who know about our gluten free diet......
who would have known that my dear husband would actually decide that he probably should stick to this diet and admit I was right! Lucky for me, I didn't benefit from it as much as he did so I am gonna eat a little here and there, but for the most part we are gonna stay gluten, or at least wheat free as much as possible.
We all did it for a solid 2 weeks and for once in Matt's entire life he was not a ball of GAS!!! The kids I am sure miss their goldfish, crackers and breads but they have taken more to a variety of vegetables as have Matt and I.
IT ABSOLUTELY HAS BEEN THE HARDEST THING FOR US TO DO!! I love to bake, make cookies, and eat quick sandwhiches....but knowing the things I do know we have decided that that is not the healthiest way to eat and we want to feel good, look good and live to be old and healthy.
For those who know little or nothing about Grains, gluten and wheat. I'll sum it up really quick, if you have more questions I will try to answer. Basically our bodies were not made to digest the protein contained in wheat. Prolonged exposure (which many of us have been eating since babyhood in HUGE amounts daily) can lead to such problems as diabetes (which is 1 reason it's on the rise so much) heart disease, certain cancers and other health problems. I'm not saying we are all destined to have any of these diseases because we eat so much. Some people are more sensitive to it than others. Those ppl are more prone to get sick after eating the type of diet us Americans it. They won't get sick right away, although if you have Celiac you may. They may have NO idea why they don't feel great but just figure it's part of a busy lifestyle. When they get older, that is when they start having more problems.
More about Celiac. PPL with celiac disease absolutely can not have Gluten, and sometimes other types of grains. The number of ppl with diagnosed Celiac disease is on the rise. Here is the catch, just because you don't have this disease does not mean you are safe from being ill from eating Gluten and other grains. MOST ppl do have at least a mild sensitivity to grains and gluten containing products. I will stop here before I write a book about it, but this is just to give you an idea as to why I chose for our family to go gluten free for a while to see how we felt and then introduce them again to then, again see how we felt.
Like I said, My husband noticed the biggest change. He was less tired while on this gluten free diet. He was also alot less gassy and wasn't always in the bathroom. I'm sure there are other small changes that he didn't mention. We only did it for just over 2 weeks, so the longer he would stay on this diet the more improvement he would have.
As for me, I didn't notice much, and even eating all these vegetables and proteins I have been sick with a cold most this month it seems, so once I am back to my usual 100% I will have a better judgement as to how this diet is helping me.
Here is what we have been eating.
Breakfasts:
gluten free cereals (which are actually yummy)
eggs (either hardboiled, scrambbled or however we feel)
smoothies
fruit
Lunch:
BIG salads with lots of peppers, carrots sunflower seeds and right now the only dressing i use is a HFCS free italian dressing.
sometimes we add chicken or fish many different way to prepare these great meats
Dinner:
We basically have just been eating protein, fruits and vegetables so...
either lean steak, chicken or fish
vegetable ideas we have loved
roasted asparagus, roasted glazed carrots, we love peas and broccoli, sometimes I get edamame beans or corn.
rice
another thing we have been eating alot of because it's gluten free and VERY yummy because we love mexican food is tacos, or taco salads, tostadas, and we love our corn chips with quacomole salsa dip
for snacks I try to always have fresh cut up fruits for the kids and us as well, and sometimes we get gluten free crackers or chips. OR of course they can snack on their gluten free cereals.
We were very strict for 2 weeks. I think my husband is gonna try very hard to stay on this diet as much as possible, and the kids and I will stay on a mostly gluten free diet. It's much harder to prepare meals fast on this diet so every once in a while i just have to cave and make macaroni and cheese or something. There are certain things that we will start eating again very occasionallly but I think we have come to the conclusion that eating a mostly if not completely non-processed diet with lots of vegetables and raw foods is the best way to eat for everyone. We are in the process also of gettin rid of sugars, which has been easy since we already elliminated most of them by going gluten free. High Fructose Corn Syrup is a whole other topic and I feel this should be ellimated from everything.
A good book to read if you are interested in the benefits of going wheat, gluten or completely grain free is called " Going against the grain."
I used to think ppl were crazy for cuttin out carbs. I have always hated the Atkins diet. There are certain things that I think should definetely be avoided. It is very hard to cut out everything in the society we live in. But it can be done.
